You have two choices for a maple syrup festival in Toronto. Both run from March 1st through April 6th, 2014. (Updated for 2014).

These conservation areas will be open 9:30am-5pm weekdays and until 5pm on weekends.

Each site features maple syrup demonstrations and hikes through the sugar bush.

The cost per person is $10 or less.

The Bruce’s Mills Conservation Area is at 3291 Stouffville Road, Stouffville.

Take Highway 404 north from Hwy 401 to Stouffville Road; head east past Warden Avenue. The entrance is between Warden and Kennedy, on the south side.

Bruce’s Mills is closed on Mondays and Tuesdays.

The Kortwright Centre for Conservation is at 9550 Pine Valley Drive in Woodbridge.

Take Highway 400 north to Rutherford Road and head west, then take Pine Valley Drive north. You will pass Davos Road on the east, but the Kortwright entrance is a bit further north and on the west side. If you reach Major Mackenzie Drive, you’ve gone too far.

Collecting Maple Sap for Maple Syrup

The picture shows a plastic pail, hung beneath a spigot that taps a sugar maple tree. That’s the simplest way to collect maple sap, but pretty labour intensive to lift and carry each pail.

In a commercial sugar bush, these spigots would be connected to hoses or pipes that drain downhill to a central vat. It’s more work to set up, and has a greater risk that a moose will stumble through and ruin the plumbing.

Maple sap runs through the tree during the spring thaw. The amount of sap depends on moisture in the ground and the proper temperatures, including the difference between the daytime high and nightly low. That directly affects the quantity, and often the price, of the finished products including maple syrup and maple candy.

The Annual Elmira Maple Syrup Festival in Ontario

The annual Elmira Maple Syrup Festival might be the most famous in Ontario, but maybe I’d known about it from relatives who live in the area…and who had worked the festival when younger. It’s a nice day trip from Toronto, if you have a car and access to Hwy 401.

The 2013 date is Saturday April 5, 2014 in downtown Elmira, Ontario; it runs from 7am to 4pm. (Updated March 1, 2014).

Take Hwy 401 west from Toronto; exit at Hwy 8 north to Kitchener-Waterloo. Take the Hwy 7 and 85 exit north, although it’s also called the Conestoga Parkway. Eventually it narrows down to Hwy 85 and later becomes Arthur Street, which leads into Elmira.

(Added April 4, 2013): I just noticed an advertisement offering a bus ride from Toronto for the Maple Syrup Festival in Elmira. That’s a sweet deal if you don’t drive, or want to avoid dealing with parking in Elmira during their festival.
